A large, inland town, at the start of the Garden Route George is not very touristy.

My suggestion:
If you have to spend a night there, it's best if you stop off at Wilderness, a small village on the coast after George.
Summary:

It's not worth stopping off in George, there's nothing really to see there. It's a large town with a lot of congestion, just like its neighbour Mossel Bay. Unless, of course, you enjoy looking at industrial chimneys. There are a good few hotels because it is situated at the crossroads of the Garden Route, the town of Little Karoo and the wine region, so one has to - pretty much - pass through it.

I have, on the other hand, loved taking the Outeniqua Pass which goes up from George Oudtshoorm, to the capital of Little Karoo. The panoramic view of the town and the sea is spectacular from the mountain route. If you have some shopping to do before going to Garden Route, don't hesitate to stop in a shopping centre here.
